How can I add Instagram and Pinterest social icons and links to the contact form? Will I need specific icons, and if so what would the specifications be?

Unfortunately, this is not possible at the current moment as you are stuck with the 3 services available in the contact section info.
I have tracked your request and I’ll push it to the developers so more services will be available in the future.
There are workarounds for this, like adding a text widget in the footer in Dashboard > Appearances > Widgets and then handle the code for all the social services that you need.
I’m sure there must be some social widgets plugins that could handle the coding for you and skip the text widget.
Hopefully the above will get you forward with the setup.
