But that also made my older posts in the bottom footer also be full length (see attachment). Since those will grid, I’d prefer they go back to a summary as they are in the demo: https://colorlib.com/activello/. How do I fix that? Thank you!

To achieve that you have to create child theme of Activello theme and develop custom code in it.
Developing custom code for custom functionality is beyond the scope of support that we provide here.
