I’ve read through several support posts but can’t find any answers. How can I add a ‘Blog’ button to my menu which links to a page showing all blog entries? Also, the ‘Latest News Secton’ ‘Button Text’ doesn’t link to a page showing all entries - how can I get this working?

You would not be able to add a log button but you can add a blog link via Appearance > Menu and add the blog page to the menu.
Please go to Settings > Reading > Your homepage displays > Static Page and ensure that you assign a Posts Page here so that the theme can use it as the blog page.
