is there a way to remove sidebar so the content area can spread across the page or is there a way to have a text widget in the sidebar that is different for each page?

You can choose whether have a sidebar on the page or not from the Appearance >customize but adding different text for different page sidebar is not possible, this may require third party sidebar plugins to integrate
