I am wanting to know how they customized their sidebar in this way? In addition, I am interested to know how they customized their header.

Well, major customization was done on this website and that’s the thing that can not be explained or replicated by easy way, definitely, this will require custom work

I have multiple sites I would like to apply these customizations too, would this be a custom CSS code I could copy and paste in each individually or would it require complex work on each?

Yes, that’s what I mean Jude, such styles cannot be achieved only with basic css changes and codes, complex customization is necessary for such changes, in other words, you need a freelancer to make such changes
