I have a woocommerce + Travelify in a WordPress self-hosted installation at: elbosquedemaria.com.
It’s for a customer, and I find no way to put a left sidebar that shows up along the entire website; it disappears in product pages, shop and woocommerce category pages. I don’t know where is the error.

I see that you have already figured that out. Travelify theme for WooCommerce pages technically uses right sidebar and pushes it to the left side of the page when needed. Which means that you need to add your content inside right side widget are to make it appear on the left side of WooCommerce page if you have specified that in the Theme Options.
