How to can change the category name to show in “LATEST NEWS” on first site ?.
I want to set only one category of the entries will appear on the main page .
U can help me ?

If I understand correctly, you want to blog page to display Latest News.
To achieve this, you should first go to Dashboard > Settings > Reading and remove the Blog page from the Front Page Display > Posts Page. Then go to Pages > Blog Page and make sure that you have selected the blog page template in the right Page Attributes.
Now the page title will reflect in the header, let me know if this is working as expected.
