I recently updated to Activello theme and am currently using a child theme - the original theme has some edits to it. I took the header.php from another child theme in order to move the menu under the logo and now I can’t change the header image.

Unfortunately its hard to say what exactly went wrong here, also modification of the theme files aren’t covered on the scope of support that is provided.
What you can do is back up your current WordPress site, using for example all in one migration plugin that allows you to download your entire site.
After this try reinstalling the parent theme and see if that helps.
In the future, please be mindful that changes implemented in an update my affect your current customizations.
