What are the benefits of importing the demo content into a new blog setup?
I am a beginner and have just set up my blog. I have imported the demo content and there is so much in there that its overwhelming.
Why would you use the demo content over just using the theme from scratch?

The demo content is used to test how the website will look like. Also some people use it and replace with real content step by step periodically.
Experienced WordPress users don’t use it and configure theme by following theme documentation Activello Theme Documentation - Colorlib and creating new content.
