Can labels be tweaked: State changed to Province, ZipCode changed to Postal Code, etc? I’m looking at the WP Pro Real Estate 5 Responsive WordPress Theme. I’m a photo-heavy realtor so I think this theme would work the best for my needs. I need it to have Canadian terminology, though.

Yes, you can localize theme for any country or region. Here you can see a quick walkthrough how listings are created. You’ll see that you can add any information there but the main thing is to keep consistency from one listing to another.
