Hello, is there a way to pull in all portfolio projects on a single page and then link that from the menu
eg: we have categories for residential/commercial/industrial etc

I want all portfolio projects under the category “Residential” to show up under the residential category page and then a link which would link to this page.

You can use the shortcode [portfolio] in the page and that would allow you to have the portfolio appear in a page. So for you the shortcode would be [portfolio include_tag:Residential].
