I would like to have the same SHAPELY “demo” layout for other pages–though I want to use different images/content from the ones I used for the homepage. Also to make it easier, could I edit this sub-theme using the customizer? Is this possible?

As it stands, the only way to have the other pages behave live the homepage in the demo is to customize the entire theme to function differently. This falls outside the scope of support that we can offer…
Another option is to use a page builder to add the features:
